The origins of the Sidra Bourbon variety are not well-documented, but it's believed to be a hybrid of Red Bourbon, Typica, and Ethiopian landrace which likely originated in Ecuador's Pichincha province.
Sidra Bourbon was developed on a large Ecuadorian research farm funded by Nestlé with the goal of combining the best traits of Red Bourbon and Typica varieties through genetic crossing, then distributing the result to local farmers.
The cherries of this coffee are soaked for 24 - 48 hours for the initial fermentation and then are pulped removing the bean from the fruit and any residual mucilage remaining on the parchment and then gently washed.
