Brew tips
This coffee can be pushed a good bit to highlight the best notes. We’ve enjoyed this at a 1:15 ratio ground significantly finer than usual (we ended up at 480 microns).
RECIPE
Using a conical dripper and 93C (200F) water
0:00 bloom with 3x the coffee weight
1:15 pour the rest of the water with a thin stream that creates lots of turbulence in the brew bed (you don’t want the stream to break before hitting the slurry). Swirl once.

Cherries are picked only once their Brix sugar content is deemed adequate, then they are brought to the wet mill where unripe floaters are removed. In the fermentation tanks Brix, PH, and temperature are constantly measured to fully control the anaerobic fermentation process. For this Reserve lot, our coffee was fermented for 4 days in sealed tanks, at an average temperature of 16.7 degrees Celsius.
