Brew tips
Use a 1:15 ratio in a conical dripper.
Grind at 700 microns (or your usual for naturals).
92C water.
We love the white peach expression of this coffee and have found it shines best when brewed at a lower ratio and relatively coarse grind. When increasing extraction (longer ratio and/or finer grind), we lost some of those beautiful notes.

The Duwancho washing station, located in Sidama, Ethiopia, is renowned for its meticulous coffee processing methods.
For this premium lot, cherries are sourced from a limited number of smallholder farmers, with an exceptional focus on cherry selection.
Each batch comprises 90% perfectly ripened cherries, 5% semi-ripe, and 5% overripe, ensuring a carefully balanced and high-quality cup profile.
The coffee undergoes a unique extended soaking process, lasting two hours, which enhances the coffee's natural sweetness.
Following soaking, cherries are dried on raised beds for up to 30 days under controlled airflow conditions to achieve consistency and optimal flavour development.
The meticulous care in farming and processing makes this lot a standout example of Ethiopian coffee excellence.
